Polenta Spinach and Beans

This crowd pleaser is such a delicious and flavorful dish. It can be a side dish or a main dish.


Ingredients:

  • 2 teaspoons olive oil

  • 1 tsp of Italian seasoning

  • 1/2 Medium sized onion

  • 3 garlic cloves

  • 1 tube polenta

  • 1 (15 ounce) can white beans, drained and rinsed

  • 4 cups spinach

  • 2 1/2 cups tomato sauce, divided

  • 1 cup shredded vegan mozzarella cheese

  • Shredded vegan parmesan


Instructions:

  1. Preheat the oven to 375 degrees.

  2. Saute the onion and garlic until soft

  3. Cut polenta into 1/4 inch slices and add to pan of onion and garlic and fry until the polenta is cooked through

  4. Prepare low shallow oven dish or cast iron pan with a little olive oil and about 1/2 cup of tomato sauce at the bottom

  5. Drain beans and rinse then sprinkle into shallow oven dish

  6. Sprinkle spinach in pan

  7. Once polenta is done, place polenta into dish on top of the spinach

  8. Pour the rest of the sauce over the top

  9. Sprinkle the mozzarella on top of polenta

  10. Sprinkle the parmesan on top of polenta

  11. Sprinkle Italian seasoning herbs over top

  12. Place in oven and cook uncovered to 22-25 minutes - once all of the cheese is melted well.
