Chick'n Parmesan

This is a take on a very popular Italian dish often served on Holidays. Your Nona will love this vegan twist on her best recipe.


Ingredients:

  • 1/2 cup Canola Oil for frying

  • Gardein Chicke'n Breasts (4)

  • 1 Cup flour

  • Just Egg liquid

  • 3/4 cup Breadcrumbs

  • 1 jar of tomato basil sauce of your choice

  • Italian Seasoning 1/2 tsp

  • Olive Oil

  • Salt and Pepper about 1/4 tsp

  • Pesto optional (see recipe for Pesto)

  • Garlic - 2-3 cloves chopped

  • 1 cup Violife Mozzarella or any vegan mozz slices

  • 1/4 cup Violife Parmesan cheese grated


Instructions:

  1. Preheat the oven to 375 degrees.

  2. Prepare low shallow oven pan with a little olive oil, garlic and about 1/2 cup of tomato sauce at the bottom

  3. Start heating oil in a deep pan for frying the chicken

  4. Pour flour on plate and mix in salt and pepper

  5. Pour Just egg in low flat bowl

  6. Pour breadcrumbs in low flat bowl

  7. Pat chick'n breasts into the flour and coat well. Then dip into the just egg and then into the breadcrumbs.

  8. Carefully place the chicken breast into the hot oil and cook for 1 minute each side.

  9. Once fried, place in the bottom of the prepared pan with olive oil and tomato sauce.

  10. Once all pieces are in the pan, drizzle the rest of the tomato sauce on top

  11. Sprinkle the mozzarella and parmesan on top.

  12. Sprinkle Italian seasoning herbs over top

  13. Place in oven and cook uncovered to 22-25 minutes - once all of the cheese is melted well.
